This time of year is crazy busy for us at Soap Passion. The majority of our markets start in a month. That means getting product ready and plans made to keep items in stock. On top of that it's planting season and countless hours go into planning for our raised beds and our incomplete flower garden. There are many nights where I just want something easy for dinner after these long days. Here is one of my go to meals for the slow cooker:
BBQ Chicken with Bacon & Cheddar Cheese
3 Chicken Breasts
A Jar of you favorite BBQ Sauce
2 Tablespoons Honey
A Pinch of Red Pepper Flakes
8oz Bag of Cheddar Cheese
Package of Pre-Cooked Bacon
Loaf of Bread (cut in half like a sub) or Ciabatta Buns
1. Combine chicken, BBQ sauce, honey, & red pepper flakes into crock-pot and cook on high for 4-5 hours depending on the crock-pot.
2. Pull apart the chicken and mix together.
3. Place pulled BBQ chicken on buns/bread with cheddar cheese and bacon, open faced.
4. Broil until cheese is melted and bacon is crisp.
5. Take out of oven and place oven toasted tops of buns/bread.
6. Serve and enjoy!
